Always purchase from refrigerated cases: The ambient temperature to store eggs doesn’t exceed 45°F (7°C).Keeping eggs refrigerated helps to prevent food borne illness.
Choose eggs with clean, uncracked shells: Salmonella tends to live on the exterior of the egg shell and can travel into interior via cracks. Hence it is recommended to inspect cleanliness and cracks or breakage of the egg shells while purchasing.
Avoid buying out-of-date eggs: Over time, the yolk begins to absorb water from egg white making the egg shell to break easily. Therefore storage period of eggs that are refrigerated should not exceed 3-5 weeks after you bring them home from the store.
